The hand-picked grapes, collected in crates, are gently pressed in an inert atmosphere. After fermentation under controlled temperatures, the wine matures on the lees until the following spring. The second fermentation in the bottle, according to the traditional method, and 12 months of aging on the lees are followed by riddling and disgorging.
